Mixed Spices

Can I adapt this easily as a vegetarian or vegan?


This mix of dried, ground spices is a base for many traditional dishes. A large amount can be prepared and kept in the freezer throughout the year. Baharat can also be bought in many mainstream supermarkets, although the flavour profile will differ slightly from this homemade version.


  • 60g black pepper

  • 18g allspice

  • 12g cinnamon

  • 12g cardamom

  • 12g nutmeg

  • 10g rosebuds


If buying the ingredients whole

Remove the seeds from the cardamom pods 

Blend everything together in a spice grinder

If buying the ingredients pre-ground

Reduce the amount of cardamom to 5g, and mix all of the ingredients together


If buying the ingredients pre-ground reduce the amount of cardamom to 5g. Rose buds can be purchased in all good greengrocers and some health food stores.
